Development of technology for obtaining lycopene-containing dry powder from tomato pomace

The development of an effective technology for obtaining lycopene-containing dry powder from pomace zoned tomato varieties, the purpose enriching food products, has novelty and significance country, since lycopene is not produced in Kazakhstan. This potential to have a beneficial effect on people's health, labor productivity state's economy. As result study, quantitative yield was determined, drying modes were compiled, including temperature time. obtained samples analyzed nutritional value, proteins, fats, carbohydrates, vitamins, micro- macroelements. At same time, special attention paid content lycopene, strong antioxidant present tomatoes. aim study develop varieties purposes with natural health its qualitative indicators. During work, lycopenecontaining determined samples, which at level of: 6.0-6.1 ± 1.0%. (drying temperature, time) been worked out. In resulting powder, values determined: proteins – 15.83 g / 100g, fats 9.3 carbohydrates 51.89 /100g. showed that contains significant amount along other important vitamins trace elements such as vitamin C, E, B2 beta-carotene. It also noted toxic substances do exceed permissible norm, confirms ecological purity. Based results obtained, optimal pomace, suitable products effect, developed.
